  • 2nd INNOYEAST MEETING IN FRANCE.

    Bordeaux/Pomerol (France), 1/2 July 2010.

    The European project INNOYEAST, reaches its first successes.

    The meeting, hold in France in July 2010, has allowed the participants of INNOYEAST to share their latest achievements.The results obtained until the moment show the effectiveness of the autochthonous yeasts, isolated and selected from the grapes of harvest 2009 from the different European wine regions to demonstrate the genuineness of the wine aroma and flavour profile. Besides, the microencapsulation seems to be a very promising technology to be applied to these autochthonous yeasts’ preparations.

    The autochthonous yeasts’ selection and their subsequent microencapsulation continue nowadays with the planning of work for next harvest 2010.

 
 

INNOYEAST

The main objective of INNOYEAST is to isolate and to select oenological autochthonous yeasts from different European wine regions and their microencapsulation.
The use of selected autochthonous starter cultures will allow the wineries to control the fermentation process and the production of high quality wine maintaining the typical sensory properties and the aroma profile of each wine area. Learn more…
