Innovation and improvement of European wine industry competitiveness.
The main objective of INNOYEAST is to isolate and to select oenological autochthonous yeasts from different European wine regions and their microencapsulation.
The use of selected autochthonous starter cultures will allow the wineries to control the fermentation process and the production of high quality wine maintaining the typical sensory properties and the aroma profile of each wine area.
Wineries and research centres from France, Italy, Portugal and Spain participate in the INNOYEAST project to share the common objective of preservation the high quality wines in Europe on the basis of their diversity and typicity.
